Hump Day Eats...

Good Morning!  I'm so happy we are already into Thursday! After today, we are one more day closer to the weekend :-)

Alright, let's get into Wednesday eats. 

Yesterday, I started off my day with a big, hot, mug of black coffee. I love the taste of coffee, that's why I prefer it hot and straight up!

Along side my mug of coffee I had a delicious oat waffle topped with sliced banana and almond butter. I love this breakfast and look forward to it every morning. 

A few hours later, I got hungry and had a small handful of pretzel crisps. 

I also had some carrots and celery. It's Wellness Week at work, so these were all over the office. 


I made it to the gym soon afterwards and got 30 minutes of cardio in. This happened on the stair master:

After the gym I had a turkey and cheese sandwich using Ezekiel bread. This hit the spot since I was ravenous. I also had grapes and a banana. 



By the time dinner time came around, I was RAVENOUS!  Dinner was Trader Joe's Vera Cruz fish and salad with cilantro dressing. 

This was delicious. 

I was still hungry so this happened:

Smoothie made with berries and almond. 

And that my friends is what I ate on Wednesday. 

I am currently typing this up on the train. Starving and waiting to eat this soon:


If you are on the east coast stay warm peeps. If you're on the west coast, I hate you :-p

Tuesday Eats...


My day started off with a cup of basic Chia Pudding and sliced banana. Recipe for Chia Pudding to come!


Lunch was one cup of brown rice with half a cup of channa masala and half a cup of daal. I also had sautéed string beans. 



In between lunch and dinner I had a bowl of pita and pretzel chips as a snack. 


Dinner was Mexican Lasagna with a side of sautéed kale, carrots and bell pepper. 


And that's my food in a day! 

I think I'm going to start updating my blog more regularly with my daily meals. This helps me keep myself in check on what I eat :-)

Restaurant Review: Bombay Sandwich Co.

Bombay Sandwich Co. is a new and healthy Indian sandwich shop that has opened in Chelsea. Ever since I heard about this place I was dying to try it! 

Not only is the food full of flavor but it's all vegetarian and full of good for you ingredients. 

When walking into Bombay Sandwich Co. you know it's a small space that has been decorated very clean, neat and simple. You walk in and you feel like you are walking into a warm, inviting place. There's something about the comforting atmosphere and the warm hearted people that make you want to stay. 


Bombay Sandwich Co. uses local ingredients and pairs them up with fragrant Indian spices. The menu offers an array of dishes such as platters, salads and bowls, all of which are gluten free. Sandwiches and wraps can also be ordered but are not gluten free.  

Last week, I ordered the Bombay Club which is potato, cucumber, onion and tomato in between THREE layers of seven grain bread. In between all the fresh veggies was a schmear of green chutney. Ah, heavenly. This was so fresh, the toasted bread added a great crunch and heartiness. The green chutney added deep, smoky flavor. 


I also ordered myself a cup of chai (black tea infused with ginger and cardamom and milk). The chai was very delicious and comforting on such a cold day. You could taste the ginger in every sip. The chai was also milky without feeling heavy and was slightly sweet.

The chai was great but then I sampled the cardamom coffee. OH MY GOOODNESS!! This is the first time I had cardamom coffee and it blew my socks off. At first, I didn't know how I would like the combination of cardamom and coffee but as soon as I took a sip I realized these flavors should have married a long time ago. We are talking a rich coffee taste paired with a sweet slightly licorice like flavor, blended with creamy milk. I could seriously have this every day. Good job Bombay Sandwich Co. 


Overall, I LOVE this place and am excited to try out more dishes. Next time, I'm going to get myself a bowl and a smoothie (I'm looking at you, Yogis Choice :-p).

Recipe Alert: Oat Waffles

Good Morning and Happy Hump Day!  Keep it up guys...just a few more days till the weekend :-)

So, you know those delicious waffles I've been having for breakfast most mornings? Well I wanted to share the flavor and health and give you guys the recipe...an incredibly easy recipe!


Let's get to it!

Ingredients:
1 cup of oats
1 cup of water
1/2 banana
1tsp of vanilla extract

Preparation:
Turn on your waffle maker and set to high. Blend all ingredients.  Lightly spray your waffle maker with some oil. Place batter in and cook until done. Enjoy!

Servings: 2

That's it folks. It's that easy. I LOVE these waffles. They are vegan and fiber packed.


I usually make a stack of these Sunday evening, to have for breakfast during the week. I just pop them in the toaster or toaster oven to reheat.  

You can top these waffles any way you like. My most favorite way to eat them is to quarter the waffle, add almond butter and banana :-)

And We're Back...

Good Morning All!

Happy Monday. Time to start the workday. I hope you all had a great weekend. My weekend was full of fun and eventful things. 

We kicked things off Friday night at a Thai restaurant. I got the Garden Green dish which is suppose to be a bunch of vegetables. I was a bit disappointed because there were a bunch of limpy vegetables, such as cabbage and bok choy. I was hoping more for broccoli, carrots and string beans. 


The husband ordered a chicken dish which looked far more interesting than my dish:


Yeah... It's on fire. 

The rest of my weekend included a lot of healthy eats:




We also did a lot of cooking and prepped meals for the week. We are on an Indian food kick and made a pot of channa masala and daal. We also made a batch of falafel burgers. 

I also made a stack of oat waffles for myself for the week:

Thursday Eats...

HAPPY FRIDAY!!! Looks like we made it :-)

Alright guys, let's get through today and we will be good to go. 

I changed up my breakfast a bit because I ran out my oat waffles. Yesterday I had two slices of Ezekiel toast topped with peanut butter and banana. 

This kept me full till lunch time. I made the mistake of not making enough meals for the week.  This had lead me to grab lunch from Europa. Yesterday I had a whole wheat pasta dish with vegetables (broccoli, mushrooms, onions), and  chickpeas topped with marinara sauce. I also had a whole wheat roll on the side. 

Dinner was a very fun night out with the hubs. We went to Junoon, a DELICIOUS Indian restaurant owned by the renowned chef Vikas Khanna. Junoon is an awesome date night place. I love the atmosphere and the staff is so nice and accommodating. 


Our meal started off with a complimentary soup. This was a warm, comforting shot of carrot ginger soup topped with a dab of cream. 


For our main course, the hubby and I shared Murg Labadar, which is chicken tikka in a tomato and onion sauce.  We also had Paneer Aur Mirchi Ka Salan, which is spiced cheese with green pepper in a peanut tamarind sauce. To go with our dishes we ordered a fragrant red Bhutanese rice and white rice. The chicken was in a rich and spicy cream based sauce.  The paneer tasted very nutty and creamy, but was not as spicy as the chicken. 


Once our main course was finished, we happily moved onto dessert :-)

I ordered the Coconut Rice Pudding, which was out of this world delicious!!! It was so creamy and full of coconut flavor. It was also topped with ginger ice cream: Heaven :-)

All in all it was a wonderful evening :-)

Hump Day...

Hey Hey People! Happy hump day. 

I hope you guys in the east coast are keeping warm and not putting yourself at risk for frost bite. Today is suppose to be a balmy 25 degrees :-p

I didn't post any food pics yesterday because I feel I've been eating the same meals everyday. Also, let's be real -why bore you!

My breakfasts have been the usual: Oat Waffle with Almond Butter and Banana 


Lunch: Lentil Shepherds Pie with Kale


For dinner, we braved the cold and went to Hoboken. 

We went to Mamoun's Falafel!


I ordered the vegetarian plate combo over salad. This came with hummus, baba ganoush and beans over salad. I ate all of this with a pita. Delish!


I'm hoping I'll be able to go check out a Curves gym today. It's right next to work and a workout is suppose to be 30 minutes. Let's see...

Happy Monday...

Good Morning!

I hope you guys all had a great weekend. It's a very rainy morning which makes it very hard to get out of bed. 

Yesterday, I started my day off with a waffle burrito. I'm loving this waffle recipe and will share it in a post soon. 

Yum! Plan on seeing this a lot for breakfasts :-) Waffle topped with almond butter and banana, folded over burrito style!

After breakfast the hubs and I finished up Season 5 of 24. We are so loving this show. Jack Bauer can get away with anything and I believe he just may be superman :-). We are excited to start Season 6 tonight! 

After 24 we are lunch. I finished up the last of the Unfried Falafel Burgers. This is another Forks Over Knives recipe which I LOVE!


After lunch we headed out to run some errands and did our grocery shopping. Afterwards we stopped my sisters place for coffee and cake and to hang out with my sister, brother in law and niece. It's always a good time when we see them. 

I also snacked on some sriracha chips (not that spicy, tasted more like ketchup). 

We made it home and I decided to make a dinner dish that we can have through out the week. I made another Forks Over Knives recipe:  Lentil Shepherds Pie. We will probably have this tonight for dinner. 

The night ended with a veggie burger (from Trader Joe's) and cucumber on the side. 


And... Because we are such exciting people, we started off Season 6 of 24 :-)

So, here's to Monday... The sooner we start the day, the sooner it will be over :-p

Saturday Shenanigans

Hello Peoples!

I hope you all had a fun filled Saturday and are now relaxing on the last day of the weekend. My Saturday was packed with lots of healthy eats and fun!  Let's get this party started!

My morning began with a delicious waffle made of just oatmeal, water and banana. I topped this baby with some almond butter and sliced banana:

After lazing around and then doing some cleaning I was hungry for lunch. Lunch was a quick bean taco. I heated up two corn tortillas over an open flame on the stove. I then topped each tortilla with beans, salsa and a little bit of guacamole. Roasted broccoli was had on the side:

Afterwards, I had some pineapple.  Of course I forgot to take a picture of that. 

In the afternoon I went to a friends place and enjoyed a snack of cheese, crackers and pound cake. My favorite combo was topping a cracker with a little bit of Brie and raspberry jam.

After snacking a few more of our friends arrived and we all headed out into the city for dinner and jazz. 

Dinner was Italian at Via Della Pace, second avenue.  I felt my meal was just ok. I found my pasta and eggplant to be quite salty. I skipped on dessert and had a nice, hot cup of americano instead. 

After dinner it was off to listen to some jazz music. We went to Smalls Jazz Club and it was very nice! This was my first time at a jazz club and I loved it. The music was great, there was some singing and it was a very nice crowd. I would definitely go there again and even check out other jazz clubs to visit. 

And that, my friends, concluded my Saturday!

Wow, time flies! We are now in 2014!!! Out with the old and in with the new...2014 is going to be a great year :-)

Of course it's January and a lot of people make resolutions to lose weight. My resolution for this year is to just eat healthy and exercise. I'd like to eat as clean as possible and exercise for good health. 

Lately I've been making a lot recipes from the Forks Over Knives Cookbook and I'm loving them. Even my loving hubby, who avoids vegetables like the plague, loves these recipes. It's helping both of us get into a healthy lifestyle. 

I intend to blog more often and share some awesome recipes with you guys. Here's to making 2014 a happy and healthy year for all!
