So, we all know that convenience is key. Anything we can grab and go is a must for our daily lives. Breakfast on the go is especially helpful. I've made my own version of "Egg McMuffins", this can be made in batches and even frozen for a later time! Make a batch of these for the whole week and you're good to go. These also make a great snack!
This is a recipe for ONE muffin, if you are making a whole batch, adjust accordingly. Also, I used one whole egg per muffin cup, but you can also add one whole egg + one egg white, and still have the same amount of points, since the egg white has 0 WW pts.
One Egg: 2 WW pts.
Salt/Pepper to taste: 0 WW pts.
3 tsp. of Fat Free Ricotta: 0 WW pts.
1/2 Scallion, diced: 0 WW pts.
1/4 Red Pepper, diced: 0 WW pts.
1 tsp. of Whole Wheat flour: 0 WW pts.

Guys, you can use any vegetables you'd like. I used Red Peppers and Scallions because that's what I had on hand. Sliced Mushrooms, Spinach or Onions are a great addition to this and also adds volume.
Wisk all of this in a bowl. Spray your muffin pan with a cooking spray, such as Pam, and pour the mixture in a muffin tin. Bake at 375 for 20 minutes, or until firm. Enjoy!!
