30 Days of Health & Happiness... Day 8

Hello hello!  I hope you guys had an awesome weekend. The weather was gorgeous! For the most part, today has been rainy and humid. Well, if any day is going to be a crappy weather day, might as well make it a Monday!

I started my day with a deeelicious smoothie! In the vitamix went coconut milk, mango, pineapple and spinach. Ah, probably the healthiest and greenest piƱa colada you will ever have :-)

An hour or so later I had a small handful of nuts. 

When lunch time came along I had two slices of cashew bread topped with turkey breast. Carrots and tomatoes on the side. 

I pretty much stayed full after this. Later on the afternoon I had another small handful of nuts. I knew I would be having a late dinner since tonight is CKO Kickboxing night. The mixed nuts will hold me over till dinner. 

After I finished my kickboxing class I went home and warmed up some meatloaf and asparagus. I made the meatloaf last night because I knew I would not have enough time to cook this evening. 

Dessert was blended frozen pineapple with coconut milk. 
A wonderful frozen treat to end the day. 

Activity:  I got my activity in by doing an hour of kickboxing. 

Happiness: Working out makes me happy. Sometimes it's so hard to convince myself to workout. Luckily, I have a great friend/workout partner who makes it easy for me :-)

***Recipe Alert*** Cashew Flour Bread

Cashew Flour(Meal) Bread

Ingredients
2 cups cashew flour(meal)
5 eggs
1TB vinegar
1/2tsp baking soda

Preparation
Preheat oven at 350 degrees. Mix all ingredients together. Pour batter in loaf pan. Bake at 350 for 30 min. Allow to cool before serving.

30 Days of Health & Happiness... Day 4

Hey Hey,

How are you guys doing?  I started my day off with another wonderful green concoction:

This smoothie consisted of spinach, almond milk, mango and banana. Mmm... Delicious!

An hour and half later I had another Pret breakfast. Yup...you guessed it, another egg, cheese and mushroom brioche sandwich. 
Between breakfast and lunch I had a bowl of cut up plum and banana:

As well as a small bowl of pretzels and mixed nuts:

Soon came lunch. I forgot to pack my lunch so I went to Hale and Hearty and got a tuna salad on multi grain bread:


As you can see my food and calorie intake was going well. Keyword is WAS! A few hour after lunch I felt ravenous. I had not one but TWO big bowls of cereals:


The overload of cereal was my set back. Normally, I would continue eating horribly for the rest of the day but this time I told myself to just move on. Continue with my day. Do my workout and have a nutritious dinner. Don't let one setback total your whole day. 

So, what did I do? I continued on with my day as I would have. I got my 30 minutes of activity in:


And I ate a nutritious dinner. I had half of a baked falafel sandwich on whole wheat. Along side that I had another green smoothie:

This smoothie contained THREE cups of spinach, 1/2 cup mango and a cup of unsweetened vanilla almond milk. 

I started my day off with a green smoothie and I ended with a green smoothie. Sure, I had a minor set back but I moved on and even got my activity in. 

Now, onto Happiness :-)
Green smoothies make me happy. I love knowing that I'm breaking a fast every morning by nourishing my body with super foods.

30 Days of Health & Happiness... Day 3


Here we are... day 3! 

Well, you will be happy to know that I changed things up before breakfast. Actually, before breakfast I started my day off with another green smoothie. Same concoction as yesterday. An hour later is when I had breakfast. 

I didn't feel like having my usual puffins with almonds and almond milk. I was going to get a bagel from Pret A Mangier instead. When I walked into Pret I looked around for a bagel when I saw: *NEW*

OMG...I just had to try this! I mean what could be better than a warm brioche roll filled with egg, mushroom and cheese?!?! AND, less than 400 calories?!?! Sign me up!

As you can imagine, breakfast was delicious. 

For lunch I had left overs from last night, but this time I had my burger in a whole wheat bun with spinach on the side.  No pic because I devoured lunch in seconds. 

In between lunch and dinner I had an apple with mixed nuts:

Before my workout and dinner I had a Cliff bar. 

Dinner was on the go. I had Panda Express. I tried to go as healthy as I could by selecting from their low cal wok menu. I loaded up on chicken and broccoli with a side of veggies:

That, my friends, was my food for the day. 

I also had a very schweaty  and intense workout at CKO KICKBOXING. Now, that was an intense hour!

The hubby and I also walked around downtown Jersey City for about an hour after dinner. 

On to Happy Thoughts!
Happiness:  Sleeping with the windows open and waking up to warm sunlight and fresh air! Ah, one of the many things I love now that summer is on the way.

30 Days of Health & Happiness... Day 2


Hello Peeps!

Today is day 2 of my 30 Days of Health & Happiness challenge!  So far so good.  I started my morning off with a Green Mango Smoothie. If you follow me on twitter..ahem ahem Kanwal81...you saw the following:

 And then...

BAM! The recipe right there. With pics. What more could you want?!? I promise... 
you don't even taste the spinach!
The smoothie was a great way to start the day. 

My breakfast was the same as yesterday. Puffins with almonds and almond milk. I will spare you the picture.

Lunch was left over falafel on a whole wheat bun with a sliced green bell pepper. Delicious.



In between breakfast and dinner I snacked on an apple and some mixed nuts:

As well as pretzels and mixed nuts:

I went back for another serving of pretzels... Ok maybe two servings. Since I felt I had my fair share of pretzels, I opted for a light dinner:

I had a diced chicken burger over mixed greens, carrots, green beans and sliced almonds. Delicious and filling!

I also managed to get my activity in for the day:

A nice long walk. I also walked a mile after dinner. 

As you can see, it was a day filled with healthy eats and some exercise!

Now, let's talk happiness:
I am happy for longer days, warmer weather and sunshine!

30 Days of Health & Happiness...


Hello Hello!

I know I know...long time no blog! Well, let's just say I'm back and will be here for a while. I have no excuse so we will get right into this post. 

The hubs and I just came back from a WONDERFUL cruise.  We took in the beaches of Cozumel, Belize, Honduras and Grand Cayman. Pictures to come soon. 

Well, with this wonderful cruise came quite a bit of weight gain :-(. I know... cry me a river. Anywho, I've decided on a 30 day challenge of Health & Happiness! Yes, 30 days of eating healthy, wholesome foods and getting some form of exercise in and 30 days of happiness. The 30 days of happiness is about what makes me happy and to be grateful for all that I have. 

Let's begin, shall we? My day started off with a bowl of Puffins (one portion measured out), almonds and some almond milk. 

Simple and delicious. 

A few hours later I had a black bean bowl made of whole wheat cous cous, black beans, tomatoes, green peppers, onions and carrots. Here's a pic of the black beans being cooked:
A few hours after this I had a fruit smoothie made of mango, pineapple and coconut milk. This was incredibly delicious and I WILL replicate this at home :)

I also had a snack of pretzels and nuts:


Dinner time rolled around and I made home made falafel burgers. These falafels are not fried and are packed with flavor. I had one falafel burger on a whole wheat bun with a salad on the side:

That my friends, is my food for the day!  I also managed to go on a 4 mile walk as my exercise for the day.

Now, onto happiness. What makes me happy? Spending time with my husband, brother in law, sister, brother and my darling, darling, precious niece who is the light of my life! I love her so much!!!
