Eggcellent Breakfast...
This morning I woke up craving an iced coffee, hellloooo sunshine, and an omelet.
I stopped by Pret for my iced coffee. Once the coffee issue had been resolved, I moved on to my omelet craving, which I fulfilled at Bread and Butter (my new favorite "they have anything and it's fresh and tasty" joint). I ordered the egg white Mediterranean omelet which is made with egg whites (duh), olives, feta, roasted red peppers. I had them also add spinach, cuz I wanted it!!! The result...a tasty and filling omelet!

Refreshing Breakfast...
Today I woke up to a hot and muggy day. If you know me, you'll know I LOVE this weather! Nothing says summer than a hot and humid day!
This weather also makes me crave cold, fresh breakfasts such as the one I had this morning. This mornings breakfast was a Chobani yogurt with freshly sliced pineapple. Totally delish and sweet!

Dinner tonight...
Dessert: dark chocolate chips and peanut butter :-)
Lunch...
Dessert was a 2% Chobani yogurt with raspberries and papaya!
Workout and Smoothie Time...
This morning I woke up at 6:00am and did my Pure Cardio workout from INSANITY. I'm repeating the last week of month one workout because I did not really follow the workouts last week.
After my cardio busting workout I replenished my body with a vanilla hemp protein smoothie! I put 4TB of vanilla hemp protein powder, 1 cup of unsweetened almond milk and half a banana into my magic bullet and let it blend up till smooth. I think I would buy this vanilla hemp protein mix again. The only ingredients are raw hemp, evaporated cane juice and vanilla flavoring. The nutritional stats are pretty good also: 130 calories, 2.5g fat, 17g of carbs, 11 grams of fiber! I also love the slightly sweetened vanilla flavor of the smoothie.

Yep, its yogurt time!
Tryin to get my veggies in today...
Breakfast was a Larabar today, because I was running late. Lunch was a 6in veggie packed sub on whole wheat from Subway. The innards of the sandwich contained lettuce,tomato,onions,cucumbers,hot peppers,sweet peppers,swiss cheese and oil and vinegar.
I sense a Greek yogurt coming up also :-p

Undoing the day...
Whenever I have a heavy meal, as full as I may be. I feel eating an apple or berries will sop up all the extra oil in me and clean me out. Of course this is all psychological but this makes me feel better. There's something about thinking of berries as a clean food, loaded with antioxidants and fiber. So, what did I do after my very heavy meal of Indian food (dessert included)? I made myself a very simple blackberry shake. In my hand held blender cup I put in a handful of frozen blackberries and about 2 cups of cold water. After a quick blend, I poured this into my juice jar and happily drank away!
Ah, now I can sleep easy tonight knowing the antioxidants from the blackberries is ridding my body of toxins :-p

It's an Indian Dinner
I had half a plate of each. Definitely a heavy meal.
Dessert was a couple of pieces of milk cake from The Bengali Sweet House. I wolfed those down before taking a picture...my bad :-p

Good morning, good morning
A couple of days ago I realized I really need my morning cup of coffee, otherwise the whole day is bonkers!
Yes, I woke up late a couple of days and did not have time to make my morning cup of joe. By 11:00am, I had a headache :-( Luckily, I was able to mask the headache with some aspirin, but I realized this was caused by the lack of caffeine. So, am I addicted to coffee? I only have one VERY STRONG cup in the morning. I need it in the morning to jump start my day.
Every night I set up my coffee pot to go off just as I wake up. This way, as soon as I'm out of the shower, I have a fresh cup of coffee.
My coffee of choice? I love Trader Joe's coffee and these days I'm loving Godiva's breakfast blend. How strong is my coffee? If the carafe fills up 2 cups, I put 3.5TB of ground coffee. I like my coffee black.
So, one cup of coffee a day...I don't think I'm addicted, but the caffeine withdrawal I get when I don't have my morning cup is a killer!

Snack Attack time...
After looking around at deli's and being unable to find some Greek yogurt, I found the next best thing at a Starbucks: Kind Bars.
I got a fruit and nut Kind Bar which consisted of Almonds, Brazil nuts, peanuts and walnuts. This filling snack had 4 grams of fiber and 180 calories. Most importantly, kept me full during dance class :-). I think I will be getting more Kind Bars!
Lunch...the best chopped salad ever?
I am really happy to be getting my veggies in. Fiber=Good :-)
Breakfast...
I really want to get into the habit of documenting everything I eat. I have a goal to look good by June 23rd!
Breakfast this morning was my delicious Peanut Butter Banana Muffin and a hard boiled egg. I have to say, I LOVE these muffins and they are so convenient to take along. I'm definitely going to make another batch of these this weekend.

Vanilla Hemp Protein Smoothie
Recipe Alert: Peanut Butter Banana Muffins
Ingredients:
One cup of peanut butter (I used creamy, no sugar added)
4 very ripe bananas 1tsp of baking powder Optional: cinnamon to taste
Preparation: Blend the bananas in a blender until smooth. Pour this in a bowl. Add the peanut butter and baking powder. If using cinnamon, add now. Stir to combine. Spray a medium sized muffin tin with oil. Pour the batter evenly, in eight muffin cups. Bake at 350 for 25 degrees.
Servings: 8
I added no sugar in these muffins and did not feel the need to because the bananas were so sweet. These muffins make a healthy breakfast or snack. Each serving has 2TB of PB and half a banana. Not bad! If you do feel you need to add a little sweetness, I suggest 1/4c of agave or honey in the batter. I hope you all make this recipe. I'm going to have to post pics later on!

Recipe Alert: Creamy Coconut Shrimp
Hey Hey....
Wow, I know, it's been a long time since I've posted. Well a some good things have happened. I've started a new job, so I'm still getting myself situated. I'm really excited to learn new things and make new friends.
Also, I am still doing INSANITY and am now into my third week!! YAY! The only setback...I seemed to have caught a cold and have not been able to work out since Tuesday. So, now I'm a couple days behind. I'm hoping tomorrow I'll be good enough to start off right where I left off.
I have also been cooking up a storm! Hopefully I can post some recipes soon.
